There are many variations in flavor and presentation for the traditional French Christmas log. I like this one because the chocolate cake and Nutella filling go together very well. I used Dream Whip to ice the cake and left it white to signify snow.
Ingredients:
3 egg yolks
6 egg whites
50 gm ice water
150 gm sugar
1 tbsp cake emulsifier
1 tsp baking powder
80 gm cake flour
20 gm cocoa powder
60 gm cornflour
1 tsp vanilla 75 gm melted butter
Filling:
400 gm Nutella
Icing/Frosting:
1 packet of Dream Whip
1/2 cup of whole milk
2 tbsp icing sugar
1 tsp vanilla
Method:
Preheat oven at 400 f.
Grease and Line a swiss roll pan 10" x 15" with greased proof paper.
Whisk all the ingredients except the melted butter until double and stiff.
Add in melted butter and whisk to mix. Pour into prepared pan and put to bake for 10 to 12 minutes or until top is brown(do not overbake)
On a slightly damp kitchen towel, dust with confectioner's sugar. Overturn pan on to kitchen towel and remove pan and greased proof paper. Trim edges and roll tightly using the towel to aid the rolling.
When cake is cooled, unrolled and spread with Nutella. Rolled it back tightly and leave in the fridge to set.
To prepare the icing/frosting:
Beat all the ingredients together until stiff.
Frost the cake as you wish
